I made these breakfast cookies that were so yummy I had to share the recipe. I clipped it from a magazine but I have no idea which one. Some healthy thing the cardiologist gave me.
Nonstick cooking spray
1 large banana
1/2 cup chunky peanut butter
1/2 cup honey
1 tsp vanilla
1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup nonfat dry milk powder
2 tsp ground cinnamon
1/4 tsp baking soda
1 cup dried raisins or cranberries
Preheat oven to 350 degrees. Line two cookie sheets with parchment paper and then lightly coat the paper with non-stick spray. In a large bowl stir together banana, peanut butter, honey and vanilla. In a small bowl cobine oats, oats, flour milk powder, cinnamon and baking soda. Stir the oat mixture into the banana mixture until well combined. Stir in dried cranberries.
Use a 1/4 cup measure to drop mounds of dough 3 inches apart on the prepared baking sheets. Flatten each mound until 1/2 thick. Bake one sheet at a time for about 15 minutes or until browned. Cool on racks. Makes about 12 cookies.
