it IS a process. Your family will adjust. My dh says it was like he was a frog in water and I turned up the water slowly. He adapted to his new environment. But, truth be told, anything that still has room in it for Guinness is ok with him…lol

GREAT article Mary Ellen…Our family also joined a CSA this year and are choosing to eat organicly….within reason 🙂 We feel good and have stayed healthy so far…I wish I’d done it sooner, when my children were young. What a beautiful gift for your family.

I’m interested to see what you think this does to your food budget. I’m worried about that, but I’d really like to go organic,,,we spend *so much* on food as it is, but then I wonder, if we shopped carefully and did things like you described, using a CSA, buying local meat in bulk…would it be as much as I feared? …but then, the milk alone I think would kill us. We go through so much of it!

I am also doing this as my New Years’ resolution (and if I lose weight in the process, yippee). I believe eating this way will reduce salt intake and cholesterol. I am also trying to become more moderate about the amounts of food we eat and learning to use food not as a crutch, or as a recreational tool, but as fuel for our body. That said, I also have Oreos in my cupboard and am a chronic Caffeine Free Diet Coke addict. Not exactly a back to basics diet. But I am trying to eat as from scratch as possible even when we use boxed cereals or snacks. We choose foods with less junk in them. We just can’t go cold turkey! I too am hoping that this will bring us all closer to God, make us healthier and help us to appreciate all the good things that God has blessed us with.

Have been doing this for seven years. So glad to have another mom on board. Take your time and remember babysteps. It is a lot easier on the husband and children! 🙂
We also have to remember we are not only choosing healthy for our familes but for all families out there.
